About this tea
Yabukita is the tea most of Japan drinks. It covers more tea fields than every other cultivar combined, and there’s a reason: grown well, it has a depth of umami that other varieties chase. Sasahime is Yabukita done the slow way, under twenty days of shade at Sakamotoen.
The shading pushes the leaf’s theanine up and its bitterness down, so what you get in the cup is the classic Japanese tea profile with the volume turned up: full-bodied, savoury, a clean sweetness underneath, and a finish that hangs around.
This is the tea to pour for someone who says they know green tea. It tastes like the textbook, in the best sense. 50g of loose leaf, good for 25 to 37 cups across multiple steeps.
