Description
Sou is written 僧, the word for a Buddhist monk. The field it comes from is said to have been cleared and farmed by monks in a time of famine, growing food for people who had none. Sakamotoen kept the name, and the tea more than lives up to it.
It is a unique gyokuro, and one of the most distinctive teas the farm makes. Where most gyokuro leads with a marine, seaweed-edged umami, Sou is soft and full in the mouth, with an aroma closer to warm grain than cut grass. Think oats and malt rather than anything green. The sweetness is broad and generous, and the finish settles on the tongue and stays there long after the cup is down.
This is the one to reach for when you want a tea to pay attention to, and it repays every bit of it. Saemidori leaf, hand-picked from the single spring harvest and lightly steamed. Water rested to 60 degrees, a small pot, two minutes, poured out completely. 50g makes 25 to 37 cups.
How to Brew
You can reuse the same tea leaves 2-3 times. On the second and third brew, steep for only 30 seconds. This ratio is just a guide, please adjust the amount of tea and water to your taste!
A 50g pack can make between 25 and 37 cups of tea!

What is Gyokuro Tea?
Gyokuro is admired as the highest grade of Japanese green tea. The name “gyokuro” translates as “jade dew” in reference to the bright green colour in the cup. It differs from the standard sencha (a classic unshaded green tea) in being grown under the shade rather than the full sun. Shading causes both the amino acid theanine and the alkaloid caffeine in the tea leaves to increase, which yields a sweet flavour.
